Bread on the rising

I am still baking bread and loving it.
Should bread only double when rising? Sometimes I let mine rise to much I think. It bakes OK but then falls. But not always. I am referring to the second rise. Thanks CF:)
 
I think bread just has a mind of it's own. Most bread machines do more then one rise and they are going to fall now and then. When they do they still taste good they just look funny. As long as it doesn't fall every time I wouldn't worry about it too much.
 
JP, I have just been using the machine on the dough setting. I have been taking the dough and let it rise first in a bowl. Then punch down and place in my baking pan for 2nd rise. Bake in hot oven 375° until bread temp is about 180-190° CF:)
