Potato Souffle

Ingredients:

6 medium potatoes, cooked
1/4 C butter or margarine
2 eggs, separated
1 C hot milk
3 drops tobasco sauce
1 tsp. salt
1/2 tsp. dry mustard
1/4 tsp. msg
1/8 tsp. white pepper
1/2 C grated cheddar cheese


Directions:

Drain potatoes - whip thoroughly. Beat in remaining ingredients, except egg whites and cheese. Add cheese, beat until cheese melts. Fold in stiffly beaten egg whites; turn mixture into greased 1 1/2-quart casserole or 2-quart souffle dish. Bake at 325 degrees for 50 minutes until a knife inserted in center comes out clean. This is a delicious alternative to regular potato side dishes! :)
