Chelsea Buns - An English staple!

Ingredients:

2 C Bread flour
2 tbls. sugar
1 tsp. instant yeast
1/2 tsp. salt
1 tbls. cold butter, diced
1/2 C tepid milk
1 large egg, lightly beaten
2 tbls. butter, melted and cooled
3/4 C raisins, golden raisins and/or dried currents
1/3 C packed brown sugar
1 tsp. pumpkin pie spice
1/4 C honey, to glaze


Directions:

Mix flour, sugar, yeast and salt together in a large bowl. Add butter and rub it in with your fingertips. Make a well in the center and pour in the milk and egg and mix to form a soft dough. Knead on a lightly floured surface for about 8 minutes or until smooth and elastic. Shape into a ball and place in lightly oiled bowl, turning dough to completely coat with oil. Cover tightly with plastic wrap and let stand in warm place until double - about 1 hour.

Lightly butter a sheet cake pan. Knead dough on lightly floured surface and roll out into a rectangle about 12 X 9-inches.

To make filling, brush surface of dough with melted butter, leaving a 1/2-inch rim border along the long sides. Mix the raisins, brown sugar and spice together and sprinkle over the butter. Starting at a long side, roll up the dough and pinch the seam closed. Slice the dough into 9 to 10 equal slices and arrange the slices in the cake pan. Cover loosely with plastic wrap or towel and let stand about 30 minutes until double.

Preheat oven to 375 degrees and bake buns for 30 minutes until golden. Transfer to wire rack. Brush buns with honey and let cool for about 10 minutes, then remove from the pan and serve warm. These are a terrific holiday treat, especially for Easter time. Enjoy!!
