Six Layer Dinner - Diabetic Friendly!

Ingredients:

1 pound ground chuck
1 medium green pepper, cut in 1/4-inch slices
4 medium red potatoes, peeled and quartered or sliced
1 16 oz. can whole tomatoes, undrained and chopped
2 large carrots, scraped and cut in 1/4-inch slices
1/4 tsp. pepper
1 large onion, cut in 1/4-inch slices
1/8 tsp. dried basil


Directions:

Cook ground beef in large skillet. (You can use an oven-proof skillet and bake the whole thing right in the skillet...or you can pour it into a casserole dish, sprayed with nonstick veggie spray and bake it in that.) Brown and crumble the meat.

If using a casserole dish, put meat in the bottom and layer potatoes, carrots, onion, green pepper and tomatoes over top. Sprinkle with pepper and basil.

Cover and bake at 350 degrees for 45 minutes or until heated thoroughly all through. Serve hot.

This casserole smells so delicious while it's baking that you almost don't want to take it out of the oven! :D
