Maple Fritters

Ingredients:

3 eggs, well beaten
1 tbls. sweet cream
2 C milk
1/2 tsp. salt
2 tsp. baking powder
4 C all-purpose flour
Maple syrup
Powdered sugar


Directions:

Sift the dry ingredients together; add milk and cream, then slowly add the beaten eggs, stirring constantly. Drop by spoonsfull into deep hot fat and fry until well-puffed and browned. Sprinkle with powdered sugar and serve hot with warm maple syrup pudding sauce.



Maple Syrup Pudding Sauce

Ingredients:

3/4 C maple syrup
1/4 C water
2 egg whites, beaten to stiff peaks
1/2 C cream
1 tsp. lemon juice

Directions:

Boil maple syrup and water until it will make a thread. Pour slowly into stiffly beaten egg whites, mixed with cream and lemon juice, beating constantly with electric mixer or wire whip. Serve hot.
