Ingredients:
2 good-sized sweet potatoes, peeled and cooked
5 to 6 thin slices lemon
1 large can apple pie filling
3 slices bacon
Directions:
Preheat oven to 350 degrees.
Cut potatoes into 1-inch slices; arrange in 1 1/2 quart baking dish. Arrange lemon slices over potatoes (Canned sweet potatoes can be used, in which case, use 10 to 12 lemon slices.). Spoon pie filling over all. Top with bacon. Bake for 45 minutes - serve hot. This dish is really tasty and livens up a ham dinner or breakfast ham.
