Ribbon Salad

Ingrediens:

1 or 2 3-oz pkg. lime geletin
5 C hot water
4 C cold water
1 3-oz. pkg. lemon geletin
1/2 C or more miniature marshmallows
1 C pineapple juice
1 8-oz. pkg. cream cheese
1 1-lb. 4-oz. can crushed pineapple, drained
1 C whipping cream, beaten until soft peaks form
1 C mayonaise (optional)
1 to 2 3-oz. pkg. cherry, raspberry or strawberry geletin
1 C pecans, chopped (optional)


Directions:

Dissolve lime geletin in two cups of hot water. Add two cups cold water. Chill until partially set. Dissolve lemon geletin in 1 C hot water in top of double boiler. Add marshmallows; stir to melt. Remove from heat. Add pineapple juice and cream cheese. Heat and stir until well blended. Stir in pineapple. Cool slightly. Fold in whipped cream, mayonaise and nuts if used.
Chill until thickened but not completely set. Pour over lime geletin. Chill until nearly set. Dissolve red geletin in two cups hot water. Add two cups cold water. Chill until syrupy. Pour over pineapple layer. Chill until firm. This is very pretty and very good. Enjoy! :D:D
