Blueberry Crisp

With the advent of warmer weather and the coming of summer, beautiful Maine blueberries will soon be available. There are many, many delicious and wonderful things one can do with them but the following recipe is one of the best and certainly one of my favourites.


Ingredients:

4 tsp. all-purpose flour
1 tbls. granulated sugar
3 C fresh Maine blueberries (okay, okay, anyone else's will do but they won't be as fat or as juicy)
2 tbls. lemon juice
2/3 C packed brown sugar
1/2 C all-purpose flour
1/2 C quick-cooking rolled oats
3/4 tsp. ground cinnamon
1/3 C cold butter


Directions:

Preheat oven to 375 degrees

In a large bowl combine the 4 tsp. flour and the granulated sugar. Add the blueberries and lemon juice; toss gently to combine. Spread berry mixture
evenly in a lightly greased 2-quart baking dish and set aside.

For topping, combine brown sugar, the 1/2 C of flour, the oats and cinnamon. Using a pastry blender, cut in cold butter until mixture resembles
coarse crumbs. Sprinkle topping evenly over berries.

Bake uncovered about 30 minutes until topping is golden and edges are bubbly. Serve warm with whipped cream or ice cream. Absolutely out of this world!! :):)
