Lumpiang Shanghai (Spring Rolls/Egg Roll)

Ingredients:

½ lb. ground lean pork
2T chopped carrots
1 pc small onion, finely chopped
2 whole eggs, beaten
¼ c chopped, cooked shrimps salt and pepper
1 T grated parmesan cheese
spring roll (lumpia wrappers)
cooking oil for deep-frying

1. Combine ingredients in a bowl.
2. Place a spoonful of the mixture onto the lumpia wrapper. Roll and seal each wrap with a dab of water.
3. Cut into serving pieces and freeze for about 10 minutes. Freezing makes the wrapper firm before frying.
4. Deep fry and serve with sweet-and-sour sauce or just ketchup.
