Default Mexican Burgers

• 1 cup sour cream
• 1 chipotle pepper in adobo sauce, finely chopped
• 3 garlic cloves, minced
• 2 pounds ground chuck
• 3 teaspoons ground cumin
• 3 teaspoons cilantro leaves, finely chopped
• 2 teaspoons salt
• 1/2 teaspoon freshly ground black pepper
• 6 Kaiser rolls, sliced lengthwise
• 1 cup crumbled Cotija cheese

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. To make Chipotle Sour Cream, combine sour cream, chipotle pepper, and 1 clove of minced garlic in a small mixing bowl. Mix until well combined and refrigerate until serving. To make patties, combine 2 cloves of minced garlic, beef, cumin, cilantro, salt, and pepper in a large bowl. Handle meat as little as possible to avoid compacting it, mix well. Divide mixture into 6 equal portions and form portions into patties to fit Kaiser rolls. Place patties on grill rack, cover, and cook, turning once, just until done, about 4 minutes on each side for medium-rare. During last few minutes of cooking, place Kaiser rolls, cut side down, on outer edges of rack to toast lightly. To assemble burgers, place a generous amount of Chipotle Sour Cream on cut sides of Kaiser rolls. On each roll bottom, place a patty and top with crumbled cotija cheese. Add Kaiser roll tops and serve.
