Cabbage and Ground Beef Casserole
4 cups coarsely shredded cabbage
2 carrots, thinly sliced
1 green pepper, seeded and coarsely chopped
1/2 cup chopped onions
1 tablespoon butter
1 pound lean ground beef
2-8 ounce cans tomato sauce
1/2 cup water
1/3 cup long grain rice
3/4 teaspoon oregano
3/4 teaspoon basil
1/4 teaspoon ground black pepper
1/8 teaspoon ground cloves
Parmesan cheese
Cook onions in butter until transparent. Add ground beef and brown. Add seasonings, tomato sauce, water, rice and vegetables. Simmer covered for 20 minutes, stirring frequently. Turned into an 8 x 8 inch square baking dish and sprinkle with Parmesan cheese. Bake for 25 to 30 minutes at 350° F.. Makes four to five servings.
