Default Pineapple Beef

12oz beef top round steak
8oz can pineapple slices
2 tbsp soy sauce
1/2 tsp grated fresh ginger OR 1/8 tsp ground ginger
1/4 tsp crushed red pepper
1 tbsp cornstarch
Nonstick cooking spray
4 green onions cut into 1/2 inch pieces
one 6oz package frozen pea pods
1 medium tomato, cut into wedges
2 cups hot cooked rice

1) If desired, partially freeze meat for easier slicing. Trim fat. Thinly slice meat across the grain into bite sized strips. Drain pineapple slices, reserving juice. Cut pineapple slices into quarters. Set aside.

2) In a bowl, stir together reserved pineapple juice, soy sauce, ginger, and crushed red pepper. Add the meat, stirring until coated. Cover and marinade meat at room temp for 15 minutes. Drain, reserving marinade. For sauce, stir cornstarch into marinade. Set aside.

3) Lightly coat an unheated large nonstick skillet or wok with cooking spray. Heat over medium heat. Add meat and green onions. Cook and stir 2-3 minutes until meat is desired doneness. Push from center of skillet.

4) Stir sauce; add to center of skillet. Cook and stir over medium heat until thickened and bubbly. Add pineapple, peapods, and tomato. Cook and stir for 2 more minutes. Serve over hot rice.
