Picadillo Tacos
1lb lean hamburger meat 1 bell pepper, diced 1 onion, diced 3 or 4 cloves of garlic, chopped small or put through garlic press 28oz can petite diced tomatoes 1/2 package frozen hash brown potatoes (the cubes, not shreds) 1 tsp cumin 1/2tsp salt 1/4tsp pepper Flour tortillas Cook frozen potatoes in microwave (add a small amount of water, cover bowl with plastic wrap and cook on high for about ten minutes) Drain potatoes. (careful, it's really hot!) Brown meat in skillet, drain grease. Add garlic, onion and bell pepper. Cook, stirring frequently, until onion starts to look see-through. Add tomatoes and seasonings, stir well. Add potatoes, cover, and simmer on medium-low for about 20 minutes. Put filling into flour tortillas and enjoy! |
