Default Easy Cheesy Beef Quesadilla

Cook 8 oz. lean ground beef and 1 small chopped zucchini in a large nonstick skillet over medium-high heat for 5-7 minutes, stirring. Add a 16-oz. can of fat-free refried beans; cook, stirring, for 4 minutes or until heated throuhg. Remove the beef mixture to a plate. Spread a third of the mixture evenly over each of 3 tortillas. Divide 1/2 cup shredded Cheddar or Jack cheese over the 3 tortillas. Top each with another tortilla. Cook each in a large nonstick skillet over medium-high heat for 1 minute per side, or until the cheese has melted. Cut each quesadilla into 4 wedges, serve with salsa, corn, chopped tomato, and guacamole.

Mmmm! Yummy! LOL I love Quesadillas! Thank you for posting this recipe. I will definately be trying this one sometime soon.
