oven at 350
use a loaf pan, 8cups big Whisk together in large bowl 3 C flour 4 tsp baking powder 1 tsp salt 1/2 tsp baking soda add and toss to seperate and coat with flour: 1 C coarsley shredded zucchini 3/4 C shredded cheddar 1/4 C chopped scallions/onions 3 Tblsp. chopped fresh parsley 1 Tblsp. fresh snipped dill, or 2 tsp. dried Whisk together in another bowl: 2 large eggs 1 C buttermilk/sourmilk is great too 4 Tblsp (1/2 stick) warm melted butter or veggie oil Add to the four mixture and mix with a few light strokes just until the dry ingredients are moistened. DO NOT OVER MIX: the batter should not be smooth. Bake until a toothpick comes out clean. 55 to 60 mins. Let cool about 10 minutes before taking out of the pan. |
