Cornbread Recipe

1 cup flour
1/4 cup sugar
4 teaspoons baking powder
3/4 teaspoon salt
1 cup yellow cornmeal
2 eggs
1 cup milk
1/4 cup soft butter

Sift flour, sugar, baking powder and salt. Stir in cornmeal. Add eggs, milk and butter. Beat until smooth, about one minute. Do not overbeat. Pour into a greased 9" x 9" x 2" pan. Bake at 425° for 20 to 25 minutes. For a tasty variation top batter with crumbled bacon before baking.
