Default Apple Bread

Apple Bread


1 cup oil (veg. or canola)
1-3/4 cup sugar
3 eggs
1-1/2 cup all purpose flour
1-1/2 cup whole wheat flour
1/2 teas. salt
2 cups chopped apples
2 teas. vanilla
1 cup chopped pecans (optional)

In mixing bowl, beat oil, sugar and eggs. Sift dry ingredients; stir
into mixture Stir in apples; vanilla and nuts Pour into 2 loaf pans
Bake at 350 55-60 min., or until tester in middle comes out clean

Looks like another winner, Mama.

I have a similar recipe in my files that calls for apple sauce rather than chopped apples. I think I like the sound of yours better, though.

I love apples in place of applesauce in breads/cakes! I could eat them everyday.

Can Man -
Applesauce Bread
Yield: 1 loaf.
Try this with a nice creamy apple butter!


1/2 cup (1 stick) unsalted butter, softened
1/4 cup dark brown sugar
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon allspice
1 teaspoon ground cinnamon
1 teaspoon vanilla
2 large eggs
1 cup applesauce
1 cup raisins
1/2 cup chopped walnuts

Preheat oven to 350 degrees.
Grease and flour 8x4x3-inch loaf pan.
Using electric mixer cream the butter and brown sugar. Add the remaining ingredients, except raisins and nuts. Mix well. Stir in raisins and nuts. Pour into loaf pan. Bake for 60-65 minutes.
