Default Cornmeal muffin recipe

This recipe is great as a side dish for chili.
  • 1 1/2 cups flour
  • 1 tbsp baking powder
  • 2 tbsp cornmeal
  • 3/4 cup milk
  • 1/2 cup butter
  • 3/4 cup sugar
  • 2 eggs
  1. Preheat oven to 350 degrees F
  2. Sift together the flour, and baking powder. Set aside.
  3. Heat the milk and set aside.
  4. Cream butter and sugar until light with a handheld mixer.
  5. Add eggs one at a time, and beat well.
  6. Add the dry ingredients and milk alternately and mixing in a little at a time.
  7. Mix until you have a nice batter.
  8. Pour into a greased muffin pan.
  9. Bake for about 20 - 25 minutes until the tops are lightly browned and the muffins begin to pull away from sides of the pan.
  10. Remove from oven, let cool for 5 minutes, then butter and serve.
