Tea Buns

Ingredients:

For the buns:

4 to 4 1/2 C all-purpose flour
1/4 C granulated sugar
1 pkg. acrtive dry yeast
1 tsp. salt
3/4 C milk
1/4 C butter
1 large egg
1 C raisins

For the topping:

1 large egg
1 to 2 tbls. sanding sugar or granulated sugar


Directions:

Preheat oven to 375 degrees.

For the buns, combine 1 1/2 C flour, the sugar, yeast and salt in a large bowl. Mix well. Heat the milk, 1/2 C water and the butter in a medium saucepan to 120 to 130 degrees. Stir the milk mixture into the flour mixture. Stir the egg. Beat with an electric mixer set on low speed until moistened. Increase speed of mixer to medium. Beat until smooth, 2 to 3 minutes. Stir in the raisins. Stir in enough of the remaining flour to make a soft dough that forms a ball.

Turn the dough out onto a lightly floured surface. Knead until smooth and elastic, 3 to 5 minutes. Place the dough in a greased bowl, turning once to grease the top of the dough. Cover and let rise in a warm place until almost double in size, about 1 hour.

Line 2 baking sheets with parchment paper. Turn the dough out onto a floured surface. Divide the dough into 20 pieces. Shape each piece into a smooth ball. Place the dough balls 1 to 2 inches apart on the prepared baking sheets. Cover and let rise in a warm place until almost double in size, 15 to 20 minutes.

For the topping, combine the egg and 1 tbls. water in a small dish. Mix well. Brush the egg mixture over the dough. Sprinkle with sanding sugar or granulated sugar. Bake until the buns are golden brown, 13 to 18 minutes. These are delicious served warm with plenty of butter! Enjoy. :)
