A different banana bread made with coconut flakes!

  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 stick butter
  • 1 cup sugar
  • 2 eggs
  • 1 cup bananas
  • 1 tbsp orange rind
  • 1 tsp pure vanilla extract
  • 1/2 tsp almond extract
  • 1/4 cup milk
  • 1 cup grated coconut
  • 1/2 cup chopped walnuts


  1. Preheat oven to 350 degrees F.
  2. Sift the flour, baking soda, and salt together.
  3. Cream the butter and sugar in a blends, add eggs, bananas, orange rind, vanilla extract and almond extract. Blend thoroughly.
  4. Add the dry ingredients, a little at a time, and alternating with the milk.
  5. Gently stir in the chopped walnuts and coconut flakes.
  6. Pour into a well greased loaf pan, and bake for 60 to 70 minutes.
