Ingredients: • 4 thin slices French or Italian bread • 4 tablespoons cream cheese, softened • ½ cup fresh or frozen “dry pack” blueberries • 3 eggs • ¾ cup heavy cream • 2 tablespoons maple syrup Also: Blueberry syrup Spread 2 slices of bread with cream cheese. Top with the other 2 slices. Slice the cream cheese “sandwiches” into 1 inch cubes. Divide the cubes and place in two individual ramekins that have been sprayed with non stick cooking spray. Sprinkle on the blueberries Mix eggs, milk and maple syrup. Pour over the bread cubes and berries. Cover dishes with aluminum foil and refrigerate overnight. In the morning, place the covered dishes in a preheated oven at 350 degrees for 30 minutes. Then remove foil and bake for another 20 minutes. Remove from oven and cool for 5 minutes. Drizzle with blueberry syrup and serve. Makes 2 servings You can also use different fruit/syrup if you favor something else. |
