Default Custard Pancakes

Can be made the night before and reheated for breakfast.

4 eggs
2 cups milk
1/4 tsp. salt
1/2 cup rice flour
1 tsp honey (optional)

4 tablespoons butter

By hand, mix first five ingredients in a bowl. Melt butter in a pan (I usually use a 8" cake pan or about that equivalent). Pour in batter. Bake at 400 degrees for 20 minutes (I find it usually takes a bit longer to set). Serves 5 (according to the recipe, not so much according to my experience, but my kids are very in to breakfast foods).

You can also sprinkle nutmeg and cinnamon on top. Basically what happens is that the flour settles on the bottom and makes a thin layer of pancake and then the milk and eggs form a custard on the top.
