Breakfast Pizza
This is my latest 'experiment' & hubby said it was pretty good. I don't think I have seen this here before so here goes:
Breakfast Pizzas 4 eggs, scrambled tomato sauce 2 large tortillas shredded mozzarella cheese These are really easy to put together. Just spread a thin layer of tomato sauce on the tortilla, then sprinkle mozzarella cheese on top. Finally, top with the scrambled eggs. Heat in a frying pan until the tortilla is crispy & the cheese is melted, about 4-5 minutes. If you wanted you could also cook up some bacon or sausage, then crumble it on top too. I think they would be better with the meat on it, but didn't have any on hand to try yesterday. Last edited by phoenyxstarr; 01-22-2007 at 01:22 PM.
