I have always had a love for this one, although I guess that my diabetes won't like it these days.
1 cup rice 2 1/2 cups water or 2 cups water 1/2 cup milk 1/2 cup chopped nuts 1/4 cup apricots, or other mostly dry fruit, such as prunes, or raisins Cook the rice normally but with an extra half cup of liquid. After the rice has simmered for about half the normal time, add to the rice the dried fruit and nuts. complete the cooking while stirring. Enjoy on a camping trip to make it taste even better. |
