Post Amish Baked Oatmeal

I found this on another recipe site and tried it, changed it a little to my taste. It is very good but must be mixed the night before and put in the frige. Bake in the morning. My husband likes to top it off with maple syrup.

3 tab. melted butter
2 large eggs
3/4 c. dark brown sugar
1 1/2 tsp. baking powder
1 1/2 tsp. vanilla
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
1 c. & 2 tab. milk
1/2 c. chopped walnuts
3 c. oatmeal

Melt butter. Grease a 1 1/2 quart baking dish, I spray with Pam. In bowl beat 2 eggs well. Add brown sugar, baking powder, vanilla, nutmeg, cinnamon and salt. Mix well, no lumps. I use a wire whisk for this part.

Whisk in melted butter and both measures of milk. Using mixing spoon stir in walnuts and finally oatmeal. Stir well and refrigerate overnight.

In the morning bake, uncovered, at 350 degrees for 35-45 min. or until set in the middle. Serve hot with warm milk poured over.

Note: My oatmeal finishes in 35 minutes. It is worth the wait. Also feed this to someone that hates oatmeal. Chances are very high they will like this. I am one of those people.
