German Pancakes Recipe

• 8 eggs
• 1 1/4 cup milk
• 1 1/4 cup half and half
• 2 cups sifted flour

1. Mix all ingredients and beat in electric mixer until smooth.
2. Fry 1/2 cup for each pancake in a heavy skillet, adding a little canola oil before pouring in batter each time.
3. Keep skillet very hot so edges crinkle and pull up.

My german grandmother makes a version of this called 'egg pancakes' that are large like a crepe but a bit thicker. She adds nuts and dried fruit while its cooking and its very yummy!
