A Great Muffin For Fall! :)
Pumpkin Apple Muffins
2½ c. flour 1½ c. sugar 1 T. pumpkin pie spice 1 t. baking soda ¼ t. salt 2 eggs, lightly beaten 1 c.canned pumpkin ½ c. milk ½ c. vegetable oil 2 c. peeled, finely chopped raw apple ¾ c.chopped walnuts or pecans, optional Streusel Topping: In a small bowl combine 2 T. flour, ¼ c. sugar ½ t. cinnamon. Cut in 1½ tablespoons butter until mixture is crumbly. In a large bowl combine flour, sugar, pumpkin pie spice, baking soda and salt; set aside. In a medium bowl combine eggs, pumpkin, milk and oil. Add liquid ingredients to dry ingredients, stirring until moistened. Stir in chopped apples. Spoon into muffin cups. Sprinkle streusel topping on top of each. Bake at 350° F., 20-25 minutes, or until done.
