Orange Deep Fried Donuts

Here's a little bit of what I did with some of those oranges I have:

Ingredients:

About 2 quarts of vegetable oil
2 C all purpose flour
2 tsp. baking powder
1/4 tsp. salt
2 large eggs
1/2 C sugar
1 Tbls. orange zest
1/2 C orange juice
2 Tbls. butter - melted

Directions:

For The Coating:
Pulse the sugar and zest in a food processor - about 5 pulses should be enough. (If doing this by hand, toss the sugar and zest, using two forks, in a medium bowl until well blended)

For The Donuts
Heat 3 inches of the vegetable oil in a 4-quart saucepan until the temp. reaches 350 degrees Whisk the flour, baking powder and salt together in a medium bowl. Whisk the eggs, sugar and zest together in a large bowl. Whisk in the orange juice, then the melted butter, until well combined. Stir in the flour mixture until evenly moistened.

Using two dinner teaspooons, carefully drop heaping spoonsful of the batter into the hot oil. Do not overcrowd your donuts. Fry, maintaining the temp. at between 325 and 350 degrees, until the donuts are crisp and deeply browned on all sides, 3 to 6 minutes. Using a slotted spoon, transfer the donuts to a plate lined with paper towels to drain. Drain for 5 minutes. Add the donuts to the bowl of orange sugar, toss until well coated and then transfer them to a serving plate. Repeat this process with the remainng batter, being sure to maintain an even temperature. Donuts are best served warm! Then it's time to absolutely PIG OUT!!:D:D
