Ingredients:

1 pound sweet Italian sausage
1 medium onion - chopped
2 cloves garlic - minced
1/3 C store-bought basil pesto
9 slices white bread, crusts removed, cubed and dried. Herbed, cheese flavoured, store-bought croutons are also good for this.
1 C shredded provolone or cheddar cheese
2 1/2 C milk
1 can cream of mushroom soup, undiluted
4 eggs
1/4 tsp. salt
1/8 tsp. black pepper


Directions:

Preheat oven to 350 degrees.

Remove casings from sausage if present. In a large skillet, cook sausage, onion and garlic over medium heat until sausage is brown and onion is tender. Drain well. Stir in pesto and set aside.

Spread half of the bread cubes on the bottom of a greased, rectangular baking dish. Top evenly with sausage/pesto mixture and cheese. Cover with remaining bread cubes.

In a large bowl whisk together milk, soup, eggs, salt and pepper. Pour soup mixture evenly over bread cubes in dish, pressing lightly to tooroughly moisten the bread.

Bake, uncovered for 40 to 45 minutes until a knife inserted near center comes out clean. Let stand for 10 minutes before serving. This is a wonderful and filling start to any day! :)


(Easy and quick way to dry bread cubes - spread cubes in good-sized baking dish or on large cookie sheet and bake at 300 degrees for 10 to 15 minutes until dry, stirring once during process. Cubes will continue to dry and crisp up as they cool.)
