Default Basic Coffee Cake

Basic Coffee Cake

Topping:
1/2 cup all-purpose flour
1/2 cup light brown sugar, packed
1/4 cup butter, softened
1/2 tsp cinnamon
1/2 cup chopped pecan

Cake batter:
3/4 cup butter
3/4 cup light brown sugar, packed
1/2 cup granulated sugar
2 eggs
1 1/2 tsp vanilla
2 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/3 cup milk


Preheat oven to 325F. Prepare 9-inch round cake pan or Bundt pan of choice by buttering and dusting lightly with flour; set aside.

Prepare topping: Combine all topping ingredients except chopped pecans (mixture should have the consistency of moist sand); stir in chopped pecans; set aside.

In large mixer bowl, using electric mixer, cream together butter and sugars until smooth and fluffy; add eggs and vanilla; continue to mix well.

In separate bowl, whisk together flour, baking powder and salt; add to creamed mixture, gradually, and continue mixing; add milk; mix well. Spoon batter into prepared pan; sprinkle topping over batter making sure to cover the batter well.

Bake in preheated oven for 40 to 50 minutes (depending on pan) until cake tests done and edges just begin to brown. Cool.
