Ingredients
1/2 cup margarine 1-1/4 cups sugar 2 eggs 2 cups all-purpose flour 3 tsp baking powder 1/2 tsp. salt 1 cup milk 2 cups fresh or frozen blueberries 1/4 cup all-purpose flour 1 pkg. (8 oz.) cream cheese, cut into small cubes Topping: 1/4 cup sugar 1/4 cup all-purpose flour 2 Tbs margarine Directions Heat oven to 375 degrees. Grease and flour 13- by 9- by 2-inch pan. Beat together the 1/2 cup margarine and the 11/4 cups sugar until well combined. Add eggs, one at a time, beating well after each. Stir together the 2 cups flour, baking powder and salt. Add to margarine mixture alternately with milk, beating at low speed after each addition just until combined. Toss together blueberries and 1/4 cup flour; fold into batter along with cream cheese cubes. Spread into prepared pan. Topping: Combine sugar and flour; cut in the margarine until mixture resembles coarse crumbs. Sprinkle over top of batter. Bake 40 to 45 minutes or until toothpick tests clean. Serve warm. Yield: 12 servings. |
