I won't post an actual recipe 'cause I assume most folks have a tried and true banana cake recipe they already enjoy... but this time of year- and in the Fall when berry vines are weighed-down heavy w/ fruit, I love to slather raspberry preserves between 2 or 3 banana cake layers, then frost w/ loads of cream cheese frosting- and top w/ as many beautiful, fresh raspberries as I can fit onto the top of the cake! Serve CHILLED and I promise you'll hear angels sing as you savor each bite!

Oh Kev that sounds good! And while your at it - add some fresh berries to your batter! And I bet it would be good with pineapple too!

Also- everyone knows banana cake is also yum-yum w/ choc frosoting! And of course, raspberries go w/ choc like pigs and mud!
