Default My Nephew's Choice Every Time For His Birthday Cake

My current avatar is Layne's Birthday Cake...

Applesauce Cake w/ Caramel Frosting

2 c. all-purpose flour
2 t. baking soda
1 t. baking powder
1 1/2 t. cinnamon
1 t. grated nutmeg
1/4 t. ground cloves
1 c. golden raisins
1 c. chopped walnuts (optional)
1 stick butter
1 large egg
1 c. sugar
2 t. vanilla
2 c. applesauce

Preheat oven to 350°F. Stir together the flour, soda, baking powder, and spices.

In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and then slowly add a portion of the dry ingredients, then a little of the applesauce, and continue alternating wet and dry ingredients, beginning and ending with dry ingredients. Add the raisins, walnuts, and vanilla at the end.

Turn into a greased and floured pan(s), and bake 35 to 40 minutes or until cake tests done. To test for doneness inserted toothpick into the center of the cake -it should come out clean when done.

Caramel Frosting

1 c. butter
2 c. light brown sugar
1 c. evaporated milk
5 c. confectioners sugar
2 t. vanilla or maple extract

Melt butter over low heat. Remove from heat.

Add brown sugar, stirring until smooth.

Return to low heat, bring to boil, stirring. Boil 1 minute.

Remove from heat. Add milk.

Return to low heat, return to just boiling.

Remove from heat. Let cool until bottom of pan is lukewarm. With mixer, beat in powdered sugar until mixture is thick & stiff. Add more powdered sugar as needed to spreading consistency. Add vanilla. Fill and frost applesauce cake!

Yummy!!! Apple Sauce cake was the exact cake I made my 1st hubby for his birthday when I was a newlywed many (34) years ago!!! I don't know about him but I have never forgot that cake, it was out of this world!!! Made from scratch and it was so spicy and of-course I was just 18 yrs old and thought I was the best wife in the world for whipping out a cake like that!!!

By the way Kevin at first glance I thought that avatar of the cake was a big bowl of Butter Scotch Pudding!!! Which I love!!! Wishful thinking I guess!!!
