Default Yippeeeeee !

Well....I had begun to think my girls (HENS) were never going to start laying ! Today I let them free range in the yard since I was home. One of my White Rocks was acting strange. LOL....I saw her just sitting on the porch clucking up a storm. Then a bit later she would sit a few minutes in other places in the yard then get up and run .Well....I noticed she settled in my flower bed by the porch so I sat in my rocker and watched....after a few minutes she popped up a making a noise ran off. I walked over and found a beautiful brown egg ! The first one from my girls ! No more store bought eggs !

Francie I can't believe you call your hens "the Girls" we call ours the same thing!!! My Eddie started it and now the whole family has followed suit! I know the feeling of elation you are feeling getting your fresh egg! I love having fresh eggs, and they are so rich and tasty. I make all my own homemade mayonnaise now, what a savings!!! I always use a fresh laid egg (still warm) to make it. And oh my goodness is it delicious and good, I only use canola oil and so I know it is better for us than the store-bought stuff that's made with regular vegetable oil. I even got my neighbors making theirs homemade too, even supplying them with fresh eggs to do so!

MamaM posted a great recipe here for homemade mayo if you need one. If you do a search and type in"homemade mayonaise" (I spelled mayonnaise wrong in the request so use one M when you type it in, and you'll find her recipe) it is a perfect recipe.

Hope your hubby is feeling OK? And you too!
