    Hi liz,

    I do not have a mayonnaise biscuit recipe as such, but I can presume you omit the lard or shortening and use mayo instead for the same results, since mayo is 99% oil. Give it a try and see if you like them.

    Default Southern Biscuits With Mayonaise

    INGREDIENTS
    2/3 cup buttermilk
    5 tablespoons mayonnaise
    2 cups self-rising flour
    1/4 cup of melted butter

    DIRECTIONS

    In a large bowl mix together the buttermilk and mayonnaise. Gradually stir in the flour and mix until all ingredients are combined. Turn dough out onto a well floured surface. If dough is sticky knead in a little extra flour. Roll out to 1/2 inch thick. Use a flour coated biscuit cutter to cut dough into pieces. Place into an oiled cast iron skillet. Dimple the center of each biscuit and brush the tops of the biscuits with some melted butter. Allow to sit in pan for 10 minutes. Bake in a preheated 425 degrees for 20 minutes, or until nicely browned. After you remove the biscuits from the oven, invert them onto a plate to prevent them from getting soggy.

    RE: "IC I can relate to your frustration re: getting that chicken fried just right! Frying at home is a big old pain-in-the-neck! I guess there is no way to have that deep vat of hot grease with the heat just so at home."

    Remember in "Fried Green Tomatoes" when Cathy Bates' character brings a platter of scrumptious-looking fried chicken to the table, and when her chubby hubby bites into a crisp drumstick he says "Man, woman- ya gotta a really good scald on the bird w/ that grease!"

    I make chocolate cake and chocolate muffins using "mayo" and they are lovely and moist.

    I believe Hellmann's Mayo had a chocolate cake recipe on their lable for years jakester and many swore by it!

    My homemede mayo is so good, and I have never had the desire to eat mayo biscuits or cake, it just seems like a waste of mayo to me! It is so expensive to buy mayo now, around here it is over $3.00 a jar! That is ridiculously high, especially when you can make your own for pennies! I use good canola oil and so I know mine is healthier than store bought!

    Isn't the price of mayonnaise ridiculous? We are close to 4.00 a jar here. I would stick to using butter or shortening. They taste better than Mayonnaise in biscuits anyway.
