    Default Invitation to Dinner

    I'm going to my Sons for Dinner on Thursday.

    We are Christening his dish washer. He's never had one before. I hope it's mexican,(the food not the dish washer) I love mexican food, I rarely have mexican as my husband can't get the hang of it.

    We used to eat out at a little place called Amigos a small bistro in the town, but it has become greatly over priced and the food standard has dropped.

    Has anyone got any mexican recipes,
    a) That are easy
    b) Have little risk of drying out and becoming brittle.
    c) Are not so spicy that you have to run for the yoghurt pot.

    My husband and I really love this mexican casserole dish. I always add hotsauce to the top of mine when we have it.

    Creamy Burrito Casserole

    1 lb ground beef or ground turkey
    1/2 medium yellow onion, chopped
    1 (1 1/4 ounce) package taco seasoning
    6 large flour tortillas
    1 (16 ounce) can refried beans
    2-3 cups shredded taco cheese or cheddar cheese
    1 (10 3/4 ounce) can cream of mushroom soup
    4 ounces sour cream
    jarred hot sauce, if desired to spice it up

    Brown ground meat/turkey and onion; drain.
    Add taco seasoning and stir in refried beans.
    Mix soup and sour cream in a separate bowl.
    Spread 1/2 sour cream mixture in the bottom of a casserole dish.
    Tear up 3 tortillas and spread over sour cream mixture.
    Put 1/2 the meat bean mixture over that.
    Add a layer of cheese.
    You could put some hot sauce on this now.
    Repeat the layers.
    Sprinkle cheese over the top and bake, uncovered, at 350°F for 20-30 min

    I Love to make home-made taco's on a warm summer day because it's so easy & you can do it right on the stove.

    Mild Taco dinner:

    1 lb, ground beef or ground chicken - brown meat

    Add 1/2 pkg.seasoning mixture

    mix in... 1/3 cup mild salsa (add some cumin- mild spice)

    1 cup of cooked white rice, mix into (ground beef, after it's cooked)

    12-soft or hard taco shells

    Top shells with mild cheese & light sour cream.

    Hi Keziah,

    You may want to do a search on [Mexican Beef Melts] it is a recipe MamaM posted here about a yr. & 1/2 ago. They are so delicious and you will like the ease of preparation. Look under the Beef section here.

    I recommend that you use flour & corn tortillas and experiment with making burritos with these. In Mexican food there is alot of Cumin used for seasoning the meat. You can add it to chicken, pork, or beef as desired with all the other spices and of-course the onion, peppers, and garlic. Use tomato sauce and cook down to remove some of the moisture. You can use refried beans from a can, and just build your burritos placing a helping of meat filling, grated cheese, and re-fried beans onto the tortilla of choice. Always heat your tortilla shells and have them nice and tasty and easy to fold. Roll or fold the tortilla around the filling. I add salas and sour cream as I eat mine.

    Also for a really quick meal you can make Quesidilla's by frying a flour tortilla with cheese in the middle. It will be folded in half like an omelete. Once the quesidilla's develop a nice golden brown remove from heat and enjoy eating them!

    Mexican Beef Melts


    1 pound ground beef
    1 package taco seasoning mix
    2/3 cup water
    1 1/2 cups thick & chunky salsa, divided
    1 can Grands southern style or buttermilk biscuits
    1 cup Mexican cheese blend
    1 cup sour cream, optional

    1. Heat oven to 375. Lightly spray large cookie sheet with cooking
    spray In 10" skillet, cook ground beef over medium high heat 5 to 7
    minutes, stirring frquently, until thoroughly cooked; drain.

    2. Stir in taco seasoning mix, water and 1/2 cup of salsa. Cook 2 to
    4 minutes, stirring occasionally, until mixture has thickened.

    3. Separate dough into 8 biscuits. Press or roll each into 6" rounds.
    Spoon about 1/4 cup beef mixture onto center of each round. Top each
    with 1 tablespoon of cheese. Fold dough over filling; press edges
    firmly with fork to seal. Place on cookie sheet.

    4. Bake 9 to 14 minutes or until golden brown. To serve, top each
    sandwich with 1 heaping tablespoon of remaing salsa and 1 tablespoon
    remaining cheese. Serve with sour cream.

    Makes 8 sandwiches

    You don't have to look up Mama's recipe. That is the second one I posted so you wouldnt have to search for it.

    This is only my personal opinion, but I feel that cooking Mexican food is so easy. Preparation is easy for me and the flavor of the dishes are some of my very favorite!

    I agree!! I love Mexican and the simplicity of the preparation combined with burst of flavors make it my favorite!

    I enjoy Mexican too! I just posted this over on the August What's For Dinner? thread, but I'll post it here as well. Here's what I'm cooking tonight for some friends...

    Tonight's canasta night so I'll be cooking for four of us.

    I plan to grill some bacon-wrapped tequila-marinated chicken tenders and serve them w/ pico de gallo and guacamole, fried flour tortilla-wedges, spicy pinto beans & rice, watermelon, flan and Bud Lite w/ Lime.
