Default Diabetic Coconut Pie Recipe?

Anyone have a good diabetic coconut pie recipe? I found a couple online but thought I would ask. I have never tried preparing diabetic desserts. I would like to make something for my hubby's stepfather. They are having a birthday/Thanksgiving family dinner Friday.
Here is the one I found.

Sugar Free Coconut Pie

1/2 cup Original Bisquick® mix
2 cups milk
1 cup flaked or shredded coconut
3/4 cup Splenda or Sugar if you're not a Diabetic
1/4 cup butter or margarine
1-1/2 tsp. vanilla extract
4 eggs

Directions
Preheat oven to 350º F. Grease 9" pie plate.
Stir all ingredients until blended. Pour into pie plate.
Bake 50 to 55 minutes or until golden brown and knife inserted in the center
comes out clean.

I made the pie using the recipe I posted. I didnt have to bake it near as long as the recipe stated. I started once to put some meringue on top but that may just mess it up. Ill stop and get him some sugar free whip topping on my way to dinner. The pie looks fine but I have no idea about the texture and taste. Guess I will find out when he tries it.
