The Enchanted Broccoli Forest
This is a great and very funky vegetarian cookbook. It was originally published in the early 80's when eating vegetarian was very outside the mainstream. My mom bought it then and used to cook from it a lot when we were kids. I borrowed it when I got married and really liked it! It's got very creative recipes and the ones i tried are pretty good - especially the Greek Pizza, that's our favorite.
