Default Yummy Oatmeal Apple Cookie Squares

YUMMY OATMEAL APPLE COOKIE SQUARES
Makes 3-1/2 dozen bars

1 cup butter flavor crisco
1 cup light brown sugar, firmly packed
1 cup sugar
2 eggs
1/3 cup juice apple
2 teaspoons vanilla
1 -1/2 cups all-purpose flour
2 teaspoons cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon nutmeg
4 cups quick oats (not instant or old fashioned)
2 cups peeled, diced apples
1/2 cup raisins (optional)

Preheat oven to 350*ºF. Grease 15-1/2 x 10-1/2 x 1-inch pan with butter flavor Crisco; set aside.

Combine Crisco and both sugars in large bowl. Beat at medium speed of electric mixer until well blended. Beat in eggs, apple juice and vanilla.

In separate bowl, whisk flour, cinnamon, baking powder, baking soda and nutmeg.

Add to creamed mixture at low speed until blended.

Stir in oats, apples, and raisins with spoon; spread evenly in prepared pan.

Bake in preheated oven for 30 to 35 minutes, or until browned and toothpick inserted in center comes out clean. Cool in pan on cooling rack.

Cut into 2-1/2 x 1-1/2-inch bars.
