Default White Chocolate Chunk And Macadamia Nut Brownie Cookies

WHITE CHOCOLATE CHUNK AND MACADAMIA NUT BROWNIE COOKIES
Makes about 3 dozen

1 1/2 cups light brown sugar, firmly packed
2/3 cup shortening
1 tablespoon water
1 teaspoon vanilla
2 eggs
1-1/2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup white chocolate chips or chunks
1 cup coarsely chopped macadamia nuts

Preheat oven to 375*F. Place sheets of foil on countertop for cooling cookies.

In large bowl, combine brown sugar, shortening, water and vanilla; beat at medium speed until well blended; add eggs; beat well.

In separate bowl, whisk flour, cocoa, salt and baking soda. Beating at low speed, add dry ingredients to creamed mixture, beating until just blended.

Stir in chocolate chunks and macadamia nuts.

Drop by rounded tablespoonfuls 2-inches apart on ungreased baking sheets.

Bake one baking sheet at a time in preheated oven for 7 to 9 minutes or until cookies are set. DO NOT OVERBAKE. Cool 2 minutes on baking sheet before removing to foil to cool completely.
