1 c. (2 sticks) butter, softened
1 c. light brown sugar, packed 1/3 c. sugar 2 eggs 1 1/2 tsp. vanilla 1 1/2 c. flour 1 tsp. baking soda 2 1/2 c. quick-cooking oats 1 (10 oz.) pkg. cinnamon chips 3/4 c. raisins (optional) Heat oven to 350*. Beat butter, sugar & brown sugar in bowl until creamy. Add eggs & vanilla; beat well. Combine flour & baking soda; add to butter mixture, beating well. Stir in oats, cinnamon chips & raisins (if using) ~ batter will be stiff. Drop by heaping teaspoons onto ungreased cookie sheet. Bake 10-12 mins., or until lightly browned. Cool 1 min; remove from cookie sheet to wire rack. Makes about 4 dozen cookies. BAR VARIATION: Spread batter into a lightly greased 9x13x2 pan. Bake at 350* for 25-30 mins., or until golden brown. Cool & cut into bars. Makes about 3 dozen bars. |
