Default eggnog cookies

EGGNOG COOKIES

1 1/4 c. white sugar
3/4 c. butter, softened
1/2 c. eggnog
1 t. vanilla extract
2 egg yolks
1 t. ground nutmeg
2 1/4 c. all-purpose flour
1 t. baking powder
1/2 t. ground cinnamon

Preheat oven to 300 degrees F.

Combine flour, baking powder, cinnamon & nutmeg. Then, cream sugar & butter until light. Add eggnog, vanilla, & egg yolks; beat at medium speed with mixer until smooth. Add flour mixture & beat at low speed until just combined. Do not overmix.

Drop by teaspoonfuls onto ungreased cookie sheet 1 inch apart. Sprinkle lightly with nutmeg. Bake 20 to 23 minutes until bottoms turn light brown.

I'm going to have to make these for my hubby & daughter this Christmas. They both love eggnog, but I don't, so these are guaranteed to last a whole lot longer than my chocolate chip cookies. LOL

I made some of these the other day....yum-o! Honestly, the eggnog flavor is pretty subtle and so good! Even if you're not a big fan of eggnog, I'd give these a try!

(I'm making another batch or two tomorrow )
