Nutty Oatmeal Apple Cookies
This is a moist, chewy cookie 2/3 cup softened butter 2/3 cup sugar 1/2 cup brown sugar 1 egg 1 teaspoon vanilla extract 3/4 cup flour 2 teaspoons cinnamon 1/2 teaspoon nutmeg 1/4 teaspoon baking soda 1/8 teaspoon cloves 1-1/4 cups quick oats (not instant) 1 cup peeled and finely chopped Granny Smith apple 1 cup chopped dates 1 cup coarsely chopped walnuts, toasted Beat butter, sugars, egg and vanilla with electric mixer at medium speed until fluffy. Combine flour with spices; gradually add butter mixture on low speed. Add oatmeal and beat until mixed. Stir in finely chopped apples, dates and walnuts. Preheat oven to 325°F. Drop cookie dough by teaspoonful on greased OR parchment lined baking sheets. Bake for 15 to 18 minutes or until lightly browned and tops appear dry. Cool on baking sheet for 5 minutes; remove to wire rack to cool. |
