Taco omelettes do sound good. Medako you are right you might be able to make some. I might have to try to make those this weekend. I also find putting leftover roast in eggs is a good way to get rid of roast leftovers.

we rarely have leftover roast...if we do, I tend to toss some BBQ sauce over it, heat it and serve it on sandwiches.

I'm pretty excited to try the omelettes though....too bad I have to wait another week before the taco party now...

I add a little twist with leftovers to make it taste good rather than just heating it. For example, with rice, I fry it with chopped hotdogs, boiled eggs and tomatoes.
