    Default Question

I see them making what looks like sauce on the Food Network all the time that they call a gastic. Forgive my spelling if it is wrong. What they heck is a gastric? Odd unappetizing name for a sauce if you ask me.

I always meant to ask someone what it is. I remember when they did The Next Iron Chef they made lots of gastics during the competition. I was so mad when John Besh didnt win that.

    Default on chef 911

    this is the defination:

Caramelized sugar deglazed with vinegar and used in fruit-flavored sauces, in such dishes as duck in an orange or port wine sauce

Ran across this recipe, looks wonderful for fall or winter--

Duck with apples and all sorts of wonderful stuff__

    Recipe: Autumn Roast Duck.

This is a technique I haven't used much, will search some more--

Default a spelling lesson and a variety of gastriques to take a look at--

this might be a fun area to explore. I often deglaze pans with fruit, but this is stepping it up--

some of these look worth filing?

    Default I don't think so--

it was spelled one way on Chef 911 and the other way FoodNetwork?

A couple of those recipes look very good, may be sometime, but will report back.
