    We may be going camping in a short while (probably a few months since it is HOT right now in Texas!) and I'd love to have a little more variety in the food. Anyone can cook burgers on the grill. Not that there's anything wrong with that, but I'd like to expand our horizons, while not making things TOO complicated. Let's assume we have a firepit/grill to work with.

    What are some tasty and simple foods you've made while camping?

    APPLE PIE ON A STICK


    1 Apple
    1 cup Sugar
    1 tablespoon Cinnamon


    Push a stick or dowel through the apple until it is almost through it - until it is secure on the stick.

    Place 2 to 3 inches over hot coals; turning to roast.

    As the apple cooks, the skin turns brown and the juice drips out.

    When the skin is loose, remove from fire leaving stick in it; peel the skin off very carefully.

    Combine sugar and cinnamon; roll apple in it; return it to roast over the coals forming a glaze; cool and enjoy.

    CAMPER'S PIZZA


    12 ounces ground beef, 80% lean
    1 medium onion, chopped
    1/2 teaspoon salt
    8 ounces refrigerated crescent rolls
    8 ounces pizza sauce
    4 ounces mushroom stems and pieces, drained and chopped
    2 1/4 ounces ripe olives, pitted and sliced
    1/3 cup green bell pepper, coarsely chopped
    4 ounces shredded Mozzarella cheese
    1 teaspoon dried oregano leaves, crushed

    Cook ground beef and onion in well-seasoned 11 to 12-inch heavy skillet with heat-proof handle over medium coals* until no longer pink, stirring occasionally to break up beef. Remove beef mixture to paper towel; season with salt. Pour off drippings, leaving skillet "greased". Separate crescent roll dough triangles; place in skillet, pressing edges together to form bottom crust and 1-inch rim up side of skillet. Spread half of pizza sauce over dough; spoon ground beef mixture over sauce. Top with mushrooms, olives and bell pepper. Pour remaining sauce over all; sprinkle with cheese and oregano. Place skillet in center of grid over medium coals. Place cover on cooker and cook 20 to 30 minutes or until crust is lightly browned.

    QUICK COWBOY DINNER

    1 lb. hamburger
    1/2 C. chopped onions
    1 (8 oz.) can tomato sauce
    1 small jar jalapeno Cheese Whiz
    1 can Ranch style beans

    Fry meat and onions until browned. Drain. Add remaining
    ingredients. Simmer for 10 minutes.

    NOTE: This can also be prepared in a crockpot.

    CAMPER'S STEW


    1 lb. hamburger
    1 lg. can Campbell's vegetable soup
    1 onion, chopped
    2 carrots, thinly sliced
    2 stalks celery ; thinly sliced
    Steamed ; rice


    Sauté chopped onion. Add hamburger and fry until browned. Add carrots and celery. Then add vegetable soup.

    Cook until heated through.

    Serve over steamed rice. (cook at home and keep in cooler in baggies)

    Cheese-stuffed Hot Dogs


    hot dogs
    velveeta cheese

    Using a meat syringe, inject hot dog with velveeta cheese Place hot dog on end of roasting stick. Roast over open flame until done.

    Biscuits and Gravy


    1 Can Store Biscuits
    1/2 Lb. Bulk or Packaged Breakfast Sausage
    3-4 Tbsp. of Flour
    1 Quart Milk
    Salt and Pepper

    Place biscuits in a greased, preheated Dutch Oven, cover and cook 10-15 min. Heat milk, brown sausage in a large skillet. When done, sprinkle flour over browned sausage to coat, (you want the sausage to look dry). Cook 3-5 min. then start adding hot milk slowly at first, stirring continously, cook until slightly thick. Turn off heat and gravy will continue to thicken. Serve over torn up biscuits.

    Breakfast Casserole


    Potato Slices
    Onion Slices
    Butter
    Diced Ham
    Cheese Slices
    1/4 cup Milk

    Slice raw potatoes and onion. Place potatoes in a non-stick aluminum pan (you can spray with Pam). Add a layer of thinly sliced onions. Sprinkle with diced ham. Cover with cheese slices. Repeat layering. Top with butter. Add 1/4 cup milk. Bake for 1 hour in home oven at 400°. When cool, place in freezer until ready to camp. Heat in pan on cookstove or over coals.
    Comments:
    My mother does not like mushrooms or peppers so I leave them out. You can hear when the food is done, sizzle, sizzle, usually about 20-30 minutes depending on the size packets you make.

    Breakfast In A Ziplock


    Ziplock Baggies
    2 Eggs Per Person
    Big Pot of Boiling Water
    The Rest of the Ingredients Are What You Like in Your Omeletes:
    Grated Cheese
    Grated Onions
    Crumbled Cooked Bacon/cooked leftover meats eg. sausage
    Green Peppers
    Red Peppers
    Salsa (if you want)
    Let your imagination go, use anything you want to put in your egg mix.

    Everyone puts their own two eggs and ingredients of their choice into their own individual zip lock bags. Knead all the ingredients so they are mixed well. Meanwhile boil a big pot of water and submerge your bags. Bring the water back up into a full boil and then cook for 15 minutes.
    Comments:
    Each person writes their names on the bags so when they are ready you just open the bag and slide the "perfect" omelete onto your plate. These are fabulous and just so easy as well as fun to put together!

    Fried Hoe Cakes

    1 cup self rising flour
    2 cups corn meal
    butter
    water

    Put your corn meal and flour into bowl and add enough water to make stiff batter. Get your iron skillet hot add butter (about 2 or 3 tablespoons)
    Drop batter by the tablespoon full. (like pancake size) fry until golden brown. great cooked over open flame.

    PIG ON A TATER

    Wrap in large piece of aluminum foil:
    1 lb.cubed pork
    1 c. BBQ sauce (cook's choice)
    1/2 c. sliced onion
    1/2 c. beer

    Wrap 4 large buttered potatoes in foil separately. Grill until cooked. Cover potatoes with butter, sour cream, shredded cheddar, and BBQ pork with sauce.

    COWBOY STEW

    2 packages of hotdogs
    2 cans pork n beans
    1 bottle BBQ sauce
    1 c. brown sugar

    Mix hot dogs, beans, BBQ sauce, and about 1 cup brown sugar in pan; mix and let come to boil. Now either let cook in oven or over grill until the beans are nice and warm and flavors mix; about 15 minutes.

    Wow I didn't start this post, but those are great recipes thanks. I am going camping for a week and these are going to come in very handy.

    What a great thread, I'll add some of mine.
    Camp fire Cobbler
    Ingredients One can crushed pineapple
    One can pie filling (apple, cherry etc.)
    One box yellow cake mix
    One stick butter/margrine
    Equipment Small dutch oven
    Camp fire
    Instructions Pour crushed pineapple and juice into dutch oven,then add pie filling. Next empty cake mix evenly on top but do not mix ingrendents. Cut butter into small pats and distribute over top of cake mix.

    Put lid on dutch oven and bake in camp fire with coals on top and bottom for about 45 minutes.
    Comment This is a quick dessert that ends up looking and tasting like a cobbler.

    Hobo Dinners
    Ingredients hamburger
    carrots - peeled and cut
    potatoes - washed and cut
    onions - cut in rings
    salt & pepper

    Equipment fire
    metal rack to place over fire
    tin foil

    Instructions 1) Take a large piece of tin foil and place a raw hamburger pattie in the middle
    2) Take cut up pieces of carrots, potatoes, and onions and place around and on top of the burger.
    3) Add salt and pepper
    4) Seal up tin foil so no juices will leak out and cook for 1\2 hour on the fire

    We also, do a big pot of Taco Soup over the fire too. Great for those really cold nights.

    Prairie Steamer


    3 young chickens ; cut into eighths
    18 small potatoes
    12 small onions
    12 sausages
    One ; dozen ears of corn.


    Scrub the potatoes, peel onions and husk corn. Save the husks, but discard the silk. Spread a layer of corn husks on the bottom of a boiler or large kettle. Pour in 1 quart water. Spread a layer of potatoes and onions on the husks. Add a layer of chicken pieces and sausages. Add another layer of husks, then a layer of corn and another layer of husks. Top with one potato. When that potato is done, everything is done. Cover the pot and steam over fire for 1 1/2 hours or until done.

    Dutch Oven Nachos

    tortilla chips
    olives
    grated cheese
    onions
    chili
    jalepeno peppers

    This recipe has no exact measurements. It is based on your personal preference. Layer tortilla chips in the bottom of a lightly oiled Dutch oven. Layer cheese then the rest of ingredients. Cover and cook at medium to low heat until cheese is melted and rest of ingredients are heated through. Serve with: salsa, sour cream, guacamole.

    Cowboy Sausage and Sweet Taters


    2 Lbs Sweet Taters
    1/2 C. sugar
    1/2 C. brown sugar
    1/4 C. water
    2 tbps. butter
    1 tsp. salt
    1 Lb. of your favorite sausage


    Parboil the sweet potatoes for 15 minutes. Peel and cut into strips. Place in greased oven. Mix sugars, butter, salt, water and boil in a sauce pan. Pour syrup over the potatoes and bake for around 40 minutes. Place sausages on top and bake for and additional 30 minutes.

    Pig on a tater -- that name cracked me up

    Nothin better than some corn on the cob from a camp fire. Also, if you're camping, you should be fishing too!!! Try and take along some of your spices for cooking fish. Clean it & wrap it in aluminum foil. By the way, that reynolds release DOES work really good!!!!!!!

    This isn't a food to cook, but Luna Bars and Cliff Bars are both good foods to eat while camping.
