    Default Recipe Question

    I downloaded this recipe the other day after seeing Rachael Ray make it. It looked good but Jon hates blue cheese. Is there another cheese that would work in its place? He loves all other kinds of cheese he just doesnt care for blue.

    Spinach Fettuccini with Gorgonzola Cream Sauce

    Ingredients
    Salt
    1 1/2 (12-ounce) packages spinach fettuccini, 18 ounces total
    2 tablespoons butter
    2 cloves garlic, finely chopped
    2 tablespoons all-purpose flour
    1 cup chicken stock
    1 cup cream
    8 ounces Gorgonzola, cut into small pieces
    A few leaves fresh sage, finely chopped
    Freshly ground black pepper
    4 handfuls baby spinach leaves

    Directions
    Heat water to a boil for pasta, salt water and cook pasta to al dente.
    Heat butter in a large sauce pot with butter, add garlic, cook 2 minutes then whisk in flour, cook 1 minute.
    Whisk in stock then cream, bring to a bubble and stir in Gorgonzola, about 2 minutes until melted.
    Stir in sage and a little pepper and cook 3 minutes more.
    In a serving bowl toss hot pasta with sauce and fresh spinach to wilt in.

    Use Havarti or any rather strongly flavored white cheese that Jon would enjoy, it will work just fine. Too bad about him not caring for Bleu!!!

    Ok they have havarti at my fav deli here in town.
    Ill get some Friday ..thats grocery day lol.

    I had him try blue chees once in a cobb salad. He hated it lol.

    You can also use gruyere or a good-quality Italian cheese (or blend) of choice.

    I love Italian cheese..actually Italian anything lol.
    Atleast I can get a good cheese selection here if not much else.
    I love to get hard Italian salami and snack on it. Pepperoni is Jons fav.

    I am not a fan of blue cheese either. I remember in the service I had a burger and thought I was putting a dallop of mayo on it. I took a bite and had that mold flavor filling my mouth. Ewwwwwwwww. Anyone ever see that maggot cheese called Casu Marzu? They eat in Italy. They scoop the creamy cheese from the center with crackers digging around the maggots. I wouldn't recommend that as a substitute for blue cheese.
    I would think that Feta Cheese would go well with that recipe though.

    Anything that has maggots would make me sick!!! That cheese just can not be THAT GOOD!?!?!

    What about Gorgonzola? Similar to blue cheese IMO, but better flavor.

    ...turning this sauce into a rich "mornay" simply by adding parmesan & a grate or 2 of nutmeg would be lovely, janie...
