    Here locally we have a lot of Amish and Mennonite communities, IC. They manufacture many products for sale- from kitchen cabinets and hand-made toys, to clothing, quilts and coverlets, and food items. There are several brands of "Amish Noodles" they make and package into 2 lb. cloth bags for sale in the chill section of markets. They are wide cut, thick noddles, almost like extra-thickTagliatelle. When you drop them into a simmering pot of chicken stock, the extra flour from them thickens the broth and builds it into a rich gravy- makes for the best chicken & noodles, ever- YUM!

    I make mine by simmering a whole hen in chicken broth (the "double broth" that results is SO rich!) along w/ carrots, celery and onions cut extra-chunky. Once the chicken meat is picked and added back in, I add the noodles and about 5 minutes before they're ready I add a bag of frozen green peas. We then ladle them piping-hot over a nest of mashed potatoes- Delish!

    "Once the chicken meat is picked" May I ask how do you pick chicken meat? I will like to try your delicious dish. I am quite sure if I go to the city Manhattan I can find Amish Noodles, I will let you know.

    Sorry- I wasn't quite clear. First you simmer a whole bird in a pot of chicken stock (or water) until thoroughly cooked and almost falling-off the bone. Then you carefully remove the whole cooked bird from the pot, put on a plate and allow it to cool until you're able to pick it with your fingers. Then pick the meat from the bone, discard the skin and put the meat back into the broth to complete the recipe.

    Kevin. when I make my chicken and dumplins, I use my mothers southern recipe which calls for making a dough with just water, flour and salt. It's rolled out thin and then cut into rectangles. Is this what is considered an Amish noodle? Lol. It does the same thing with thickening the sauce into a gravy.
    Many peole have never had flat dumplins and become addicted to them very quickly after I get them to try them.

    IC my very Southern Belle deceased Ma-In-Law made the flat rolled dumplings, at first when she served them and when I first tased them I thought "What the HAY???" After many Sunday dinners of her Chciken & Dumplings I grew to love them They are not bad at all, you just have to cook them long enough to remove the "gummy & doughiness" they are good. As a matter of fact there is a canned Chicken & Dumpling put out by "Sue Bee" that is the flat dumplings and they are good too! I prefer the drop dumplings and the light fluffy centers that absorb the broth!

    Oh and I forgot our menu tonight!

    Red Wine Beef Stew
    French Bread
    Pumpkin Pie (made from Haloween Pumpkin- I hate the pumpkin flesh to go to watse so I paint the face on and next day make pies!)

    I had to cook the Stew outside on the burner on our grill because our stove blew up last night, scarred the holy beejeebers outta me! And so now tomorrow we are off to buy a new stove. I want a GE, I hate Magic Chef appliances, if I had not turned from the stove at the exact moment I did I would have been burnt by flames shooting from the burner. It actually burned a huge hole in the bottom of my Stainless Steel Dutch Oven that has the doule thick bottom! Happy Haloween Trick!!!
