    I have my Mom w/ me this week (For those who don't know- my Mom suffers from severe mental illness and she lives at an assisted-living facility an hour away, so she can remain somewhat independent. She's now developing physical health issues and needs more care but isn't quite ready for a nursing-home, so she's dividing time between my place and my sister's family's home until we can get her into a place closer to us where we can check-in on her daily) so I'm cooking comfort foods that she (and I) loves. Weds. Nite we had skillet-fried chicken livers, mashed potatoes & onion gravy, green beans and butterscotch-meringue pie. Thursday Nite we're going to sister's and she's making Lasagne.

    Home made Mac and Cheese tonight baked with diced tomatoes. It one of my favorites.

    I did not realize your Mom was already in Assisted Living. I know she must adore you & your Sis, I admire you for loving and caring for her in such sweet ways! God Bless each of you

    For lunch today I ate our last Hot Leg, dang it was good!!! Yeah Kev "Hot Legs" reminds me of Rod Stewart too that man had some awesome songs.

    Tonight's menu:

    Fresh Salmon
    White Rice
    Leftover Pinto Beans
    Seasoned Steak Tips for the ones who dislike fish
    Pineapple Upside Down Cake for desert
