TURKEY! Cookie![]()
I've always wanted to cook a goose for Christmas. But every time I mention it, folks revolt! They want turkey for Thanksgiving and prime rib roast for Christmas. I never win.
Maybe this year.......

I've done goose a couple times - it was very tasty but be forewarned - there's not much meat on a goose!
I took great pains to search out an up country butcher / specialty shop - they actually raise most of what they sell . . .
show up at the shop, pushing Christmas time:
me: Hi, I' like a fresh goose.
them: okay - but fresh at this time of year isn't the best. we can sell you a nice frozen one or I'll get Larry, he'll take you out to the pens and you can pick one....
it just barely fed two adults and three pre-teenage kids . . . I just nibbled away the "leftovers" while doing dishes rather than actually strip the carcass and 'store' them.
I have never prepared a turkey for Thanksgiving dinner. I have always wanted to but usually my grandmother or mother wants to make the meal. I want to at some point and I would probably use the 2-Hour Turkey recipe from the Safeway Thanksgiving site. I've been itching to make Crab Crakes from scratch, but just haven't gotten around to it yet.
I cooked goose once and would never do it again. They have so much fat on them I had to take the pan out of the oven and dump out the fat many times while it roasted. None of us cared for the taste either. We love the flavor of duck but Ill never fix goose again.
